A simple yet satisfying summer meal, this Grilled Chicken Margherita is bursting with fresh flavors and ready in about 30 minutes.
Ingredients
* 1.5 lbs boneless, skinless chicken breasts
* 2 tablespoons extra virgin olive oil
* 2 cloves garlic, minced
* 1 tablespoon fresh lemon juice
* 1 teaspoon dried oregano
* 1/2 teaspoon dried basil
* 1/4 teaspoon salt
* 1/4 teaspoon black pepper
* 8 oz fresh mozzarella, sliced
* 2 large ripe tomatoes, sliced
* 1/4 cup fresh basil leaves
* 2 tablespoons balsamic glaze
* Pinch of red pepper flakes (optional)
Instructions
1. Combine olive oil, garlic, lemon juice, oregano, basil, salt, and pepper in a bowl.
2. Place chicken breasts in a resealable bag, add marinade, and shake to coat. Marinate for at least 30 minutes (up to 2 hours).
3. Preheat grill to medium-high heat and lightly oil grates.
4. Grill chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
5. During the last few minutes of grilling, slice tomatoes and mozzarella.
6. Remove chicken from grill, top with tomato and mozzarella slices, fresh basil, and balsamic glaze.
Notes
Use chicken thighs for richer flavor. Add grilled vegetables or red pepper flakes for variations. Serve with pasta salad, grilled vegetables, or crusty bread. For kids, cut chicken into smaller pieces or serve toppings separately.350-400
