Ingredients
- * 1/4 cup olive oil
- * 1/4 cup freshly squeezed lime juice
- * 2 tablespoons chipotle peppers in adobo sauce
- * 1 tablespoon adobo sauce from the can
- * 2 cloves garlic, minced
- * 1 teaspoon ground cumin
- * 1/2 teaspoon smoked paprika
- * 1/2 teaspoon salt
- * 1/4 teaspoon black pepper
- * 1.5-2 lbs flank steak or skirt steak
- * 1 tablespoon olive oil (for cooking)
Instructions
1. Prepare the Marinade: Combine olive oil, lime juice, chipotle peppers, adobo sauce, garlic, cumin, smoked paprika, salt, and pepper in a blender. Blend until smooth.
2. Marinate the Steak: Place steak in a resealable bag or shallow dish. Pour marinade over steak, ensuring it’s fully coated. Marinate for at least 30 minutes, up to 4 hours, in the refrigerator.
3. Cook the Steak: Grill, pan-fry, or broil the steak to your desired doneness (medium-rare recommended), using a meat thermometer to check the internal temperature.
4. Rest and Slice: Let the steak rest for 10 minutes before slicing thinly against the grain.
Notes
Adjust the number of chipotle peppers to control the spice level. Serve with tortillas, rice, beans, or your favorite sides. For a vegetarian option, marinate portobello mushrooms instead of steak.
